We really for all the types of fats in our cooking techniques: we only use free farmed animal fats; special extra virgin oils able to enhance and determine plates nuances; malga butter in summer. We make our seeds oils with a cold pressing procedure.

We only use biological old grain flour: we won’t get constant technical results, but flavor will reward us.
Game
Only from animals naturally grown in Italy: deer, roe deer, wild boar, furred and feathered game.
Cheese
We only offer fresh milk cheese coming from small producers: we love keeping a connection to our land and traditions, we prefer to avoid following fake progress ideas that lead to standard homologation. We offer our very land’s best production and some Italian and French jewels.
